Banana & cinnamon 2 ways

Pondering over breakfasts, that has to be healthy, wholesome and most importantly something that is fast.
Healthy bakes that has a long shelf life is something that I've always wanted to do, for the simple reason of getting us going during the busy weekday morning.
A scrumptious morning breakfast is necessary to kick start our day, so it needs to be loaded with proteins and necessary good carbs...
Banana is good in potassium, has good carbs and energy, so this combined with cinnamon gives an amazing taste and a lovely nutritional balance.
This recipe gives you freedom to make it as healthy as possible, you can use whole wheat flour and all purpose flour combined or just wholewheat flour .. I used a combination.
then the sugar you can use fine granulated white sugar or brown sugar. I used cane.
Here I have made it in two different ways, a loaf and a cake, both equally tasty.
The uniqueness in this recipe is the cinnamon and the brown sugar blended and topped on the cake; and for the loaf it is spread in between, both give a crunch and a distinct nuttiness to the bake.
one more important tip I would want to leave u with is that, this recipe can be
made into :-
2 one pound loaves or you can make two 6 X 2'' round cakes.
1 one pound loaf and a single 6 X 2'' round cakes

Ingredients

  • 1 cupbutter , melted
  • 1 cupsugar fine
  • 2eggs large
  • 1 teaspoonvanilla extract pure
  • 1 cupall purpose flour / maida / flour no. 1
  • 1 cupwhole wheat flour
  • 1 teaspoonbaking soda
  • 1 and 1/2 cupsbananas ripe , mashed
  • Cinnamon Sugar
  • 2 tablespoonsbutter , melted
  • 6 tablespoonsdark brown sugar
  • 2 tablespoonscinnamon ground

Steps

    Preheat oven to 180 degree C. Grease and flour a loaf pan and set aside (read post for pan details)

    Mlt the butter and let cool slightly set aside. Whisk in the sugar then the eggs and vanilla. Stir in the flour and baking soda. Fold in the mashed bananas until combined.

    In a small bowl, blend the cinnamon sugar. set aside

  4. 4

    Spread 1/2 of the batter in the pan, layer the cinnamon sugar and swirl it around lightly, then add the remaining of the batter. Just about to 3/4 of the pan. (Make sure not to fill it to the rim)

    Place loaf pan on a baking sheet and bake for 60-70 minutes - 2 pound loaf for 30 40 minutes - 1 pound loaf or until golden brown or ta toothpick inserted in the center comes out clean. Let the bread cool in the pan for at least 30 minutes be...

    Put the batter in a greased cake tin (read post for pan details) two 6 X 2'' round cake tins

  7. 7

    Sprinkle the cinnamon sugar on top of the cake

  8. 8

    Bake for about 20 - 22 mins or until golden brown or a toothpick inserted comes out clean. let the cake cool for about 10 to 15 mins, and then remove it on a wire rack to cool it completely.
