Northern African Sausage

Spicy (or not), home made sausage.
Using a food processor allows you to control things. And it's so easy. This is based loosely off an African dish called merguez. But lamb here is very expensive for some reason, so I decided to use pork, and they had some nice chops on sale. I made this a day ahead, and allowed the flavors to blend, but you can go just a couple hours if you need to. I spent less than 20 minutes making the sausage in this fashion, and I can't say you would save much time using pre-ground meat, but you can. Just make sure there is some fat content in whatever meat you use, or it will end up too dry. The meat is the stand out star here, and had really good flavor.

Ingredients

4 servings
  1. 1 poundmeat
  2. 2 tspcumin
  3. 1 tspcoriander
  4. 1/4 tspallspice
  5. 1 tspsalt
  6. 1 1/2Tbl. mild paprika
  7. 1/2-1 tspblack pepper (to taste)
  8. 1/4-1 tspcayenne (to taste)
  9. 4garlic cloves

Steps

    I started with these nice boneless chops that were on sale

    Cut into large chunks to make it easier on the food processor

    Peel and chop some garlic, mash it if you don't want chunks or are using pre-ground meat

    Add the meat chunks, garlic, and all the ground spices to the processor

    Pulse and check, pulse and check

    When it is too your liking, store in the refrigerator until using.

    Next day, I rolled them in 8 about even pieces, but, for a roll/sandwich, 12 might be a better size.

    Just grill them, I'm using a stove top grill here.

    Pita bread in the stores here, not so good, so we choose tortillas. tzatziki sauce, onion

    The wife likes tomato. I forgot to get cilantro or flat leaf parsley 😟, I think avacados would be good also. Or serve with rice and a side of choice.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
