Light Chicken with Rice

This is essentially a very simple and quick way to cook chicken. It may not be anything special, but it remains the most delicious dish you can eat when you need to cook something particularly light.

Place the chicken breasts in a non-stick pan with a little water. The water should reach less than halfway up the breasts. Let the water come to a boil.

Meanwhile, in a pot, add 1 tablespoon of olive oil and the rice. Stir with a spoon to coat the rice with oil and let it turn slightly golden. Add twice the amount of water as rice, add a little salt, stir slightly, and let it boil.

The chicken breasts should now be boiling. Cover the pan with a lid and lower the heat slightly.

Do NOT stir the rice. Let it boil undisturbed. You'll see small holes forming where the steam escapes. Leave it like this (without stirring) until you see no more water through the holes.

You can cut the chicken breasts in half to cook them faster and ensure they are cooked through. The juices will be minimal, but that's okay. Keep them covered to continue boiling. Be careful not to let them run completely dry. If this happens before the chicken is cooked, add a little more water.

When you see that there is no more water in the rice, turn off the heat, cover with a towel, and place the lid on. Leave it like this for 5 minutes until the chicken is done.

When the liquids have evaporated and the chicken is cooked, leave it in the pan a little longer. It will get a nice color. Turn it on both sides. Don't let it burn, just let it brown slightly. Turn off the heat as it is ready.

Drizzle a little olive oil, salt, and lemon on top. If you don't have stomach issues, add oregano and pepper.

The rice is ready. Open the pot and stir. You'll see it's fluffy and separate.

The meal is ready. Serve some rice and a little chicken on a plate and see how delicious such a simple dish can be.
