Ingredients

130 Minutes
  1. 1leg of lamb (preferably front or hind leg), about 4 1/2 lbs (2 kg)
  2. 6-7large garlic cloves
  3. 1 cupdry white wine (240 ml)
  4. 1 cupwater (240 ml)
  5. 3 1/2 tablespoonsolive oil (about 50 ml)
  6. 2-3 sprigsfresh rosemary
  7. 2-3 sprigsfresh marjoram
  8. Salt
  9. Black pepper

    Wash the lamb thoroughly and pat it dry with a kitchen towel.

  2. 2

    Peel the garlic and cut it into slivers. Using a sharp knife, make deep incisions all over both sides of the lamb.

  3. 3

    Insert the garlic slivers into the incisions.

  4. 4

    Rub the lamb all over with olive oil, salt, and pepper, then place it in a roasting pan. Drizzle a few tablespoons of olive oil over the top.

  5. 5

    Pour the wine into the roasting pan and add a few rosemary needles and marjoram leaves.

  6. 6

    Cover the pan with aluminum foil and place it in a preheated oven at 400°F (200°C) for 1 to 1 1/2 hours.

  7. 7

    After the first 30 minutes, turn the lamb over to the other side.

  8. 8

    Cover again with foil and roast for another 30 minutes, until the lamb is nicely browned.
