Ingredients

1 round 13-inch baking pan
  1. 3 cupsflour (about 375 grams)
  2. 2 cupstahini (about 480 grams)
  3. 1 cupsugar (about 200 grams)
  4. 1 cuporange juice (about 240 ml)
  5. 1 cupwater from boiling cinnamon sticks and cloves (about 240 ml)
  6. 1/2 cupbrandy (about 120 ml)
  7. 1 cupcoarsely chopped walnuts (about 100 grams)
  8. 1/2 cupblack raisins (about 75 grams)
  9. 1 teaspoonground cinnamon and cloves
  10. 3 teaspoonsbaking powder
  11. 1/2 teaspoonbaking soda

Steps

  1. 1

    Boil 2-3 pieces of cinnamon stick and 5-6 whole cloves in 2 cups water. Strain and measure out 1 cup of the spiced water.

    Place the tahini in a mixer and blend with the sugar.

  3. 3

    Add the spiced water, orange juice, and brandy.

  4. 4

    Toss the raisins with a little flour. Sift the remaining flour with the baking powder, baking soda, and ground cinnamon and cloves.

  5. 5

    Gradually add the flour mixture to the tahini mixture. Finally, gently fold in the walnuts and raisins with a spoon.

  6. 6

    Pour the batter into a well-oiled 13-inch round baking pan and bake in a preheated oven at 350°F (180°C) for 1 hour.
