This is my mom's recipe, created by combining several different recipes. This batch makes about 80 medium-sized cookies. They keep well, but to prevent them from drying out, store them in an airtight container once they've cooled. Good luck!

Mix the olive oil (1 cup) with the sugar (1 1/2 cups), then gradually add the orange juice (a little less than 1 1/2 cups).

Add the orange zest, vanilla, salt, cinnamon, and brandy (1 shot).

Dissolve the baking soda (1 1/2 teaspoons, sifted to remove lumps) in the remaining orange juice and lemon juice. Stir well until the baking soda dissolves and becomes foamy. Add this soda mixture to the oil, sugar, juice, and flavorings mixture.

Gradually add the self-rising flour (about 4 cups) and the all-purpose flour (about 8 cups), both sifted, mixing as you go. You may not need all the flour, or you may need a little more, depending on your flour. The dough should be soft and not overworked. The cookies will not rise much.

Shape the cookies and place them on a baking sheet. Bake with convection at 350°F (180°C) for 20 to 25 minutes.
