Gardoubakia (a variation of kokoretsi baked in the oven) are a very tasty Easter meze that is very easy to prepare, make it and you'll think of me.

After having washed and drained the intestinces well, cut the offal into small pieces and sprinkle with garlic, oregano, salt, pepper.

Take the skewers that are normally used for souvlaki and pass piece by piece the offal on each and wrap tightly with the intestine, until you run out of ingredients.

Finally, pull out the skewers from the gardoubaka and place them on a baking tray, pour lemon juice and oil over them as well as a little water and bake them covered at first with aluminum foil at 200°C and a little before they are done, remove the aluminum foil and let them get golden brown without burning.
