Wash the sardines and arrange them in rows in your baking tray.

Season with salt and pepper on one side, sprinkle with thyme and rub the lemon zest on the fish so it is equally distributed.

Sprinkle with the oil and add a little water... 1/2 cup.

Bake for 30-45 minutes at 220°C and they are ready.
