Salad with lentils

Steps

Place the lentils in a pot with 2 1/2 water and boil them. Lower the heat and simmer for 35 minutes or until they are tender. While boiling, you might need to add a little more water, taking care that they don't overcook and get mushy.

Strain them and place them in a large bowl.

Add the rest of the ingredients except the lettuce, season with salt and pepper and mix well. Cover with cling film and place it in the fridge for at least 15 minutes so that it cools.

Arrange the lettuce leaves on a platter and spread the lentils on top.

It is served chilled.
