This used to be a very popular trahana (cous-cous-like dry pasta with dairy) dish, cooked in a tava (large flat cast iron frying pan) in the area of Livadeia.

Steps

Wash the eggplants, cut them into medium-sized cubes, brush them with oil and bake or fry them.

Set them aside and sauté the onion and the garlic.
- 3
Add the eggplants, the tomatoes, salt and pepper, the oil and a little water.

Let everything boil well and add the trahana.
- 5
Simmer until the sauce thickens.
