A humble weed that grows in gardens and noone really pays any attention to it.This recipe is something between a salad and a quick pickle for ouzo.In Greece, if someone speaks very fast, they always ask him if he has eaten purslane, because it is a bit slippery!

Steps

Harvest your purslane from an area that is clean without animal litter and wash them with plenty of water.

Cut them into smaller pieces of 8-10 cm each.

Dip the purslane in a pot with salted boiling water and let them boil for just 4-5 minutes.

Strain them well so that they don't have any water.

While they are still hot, mix them with the garlic, the vinegar and the olive oil. Taste and add salt if necessary.Bon appétit!
