In a woke or fry pan, heat ghee and stir fry the grated bottle gourd on a me heat, until most of its moisture is evaporated, now add milk to the pan and keep stirring. Bring it to boil

Once the milk stir fried bottle gourd has come to a boil, add sugar and keep stirring until the milk is reduced to half

Switch off heat and allow the mixture to cool down and pour the mixture to a blender or mixie and blend for few minutes. Add dairy whitener and blend once again. Now transfer it to air tight container and keep it in freezer after putting cream or malai, whatever you are using on top and cover it. Let it be there for 4 to 5 hours

Take out and pulse it with blender, add dry fruits and cardamom powder and freeze once again for 6 to 8 hours or overnight. You may garnish it with dry fruits before freezing

Scoop out and enjoy bottle gourd or lauki ice cream
