Ingredients

2 servings
  1. 500 gramsboneless chicken (Breast or Thighs) cut into strips
  2. 2 Tablespoonsolive oil
  3. 1 teaspooncumin seeds
  4. 1/2onion, chopped fine
  5. 8-10 clovesfresh garlic, sliced
  6. 1 tablespoonchopped ginger (and turmeric if available)
  7. 2 teaspooncurry masala
  8. 2 Tablespoonsundried tomatoes
  9. 1 cupfresh or frozen green beans, cut
  10. 1 cup(canned mushrooms)
  11. 2Sundried Prunes (Plums) sliced
  12. 2 tablespoonsoy sauce
  13. 1 cupwater
  14. Salt to taste

Steps

  1. 1

    Marinate chicken strips in 1 teaspoon of curry masala for 10 mins. Heat oil on medium heat. Add cumin seeds, cook 1 minute. Add sliced garlic and cook 1 minute. Add marinated chicken and cook 3 minutes - tossing and turning. Take chicken out and set aside.

  2. 2

    If necessary add a little olive oil to the same pan. Add onions, ginger, turmeric, 1 teaspoon curry masala. cook 2 minutes. Add green beans, mushrooms, sun-dried tomatoes cook 3 minutes add soy sauce and add 1/2 water and cook 2 minutes. Now add the chicken and prunes. Add remaining water if it is too dry. Cook on very low heat for 10 mins. Garnish with cilantro and serve hot.
