My friend Fenella and I were in the mood for a quick, light dinner before we headed off on an adventure around Ireland for the weekend! This was such a great quick and easy fish dish! Amazing for a light dinner!

My friend Fenella and I were in the mood for a quick, light dinner before we headed off on an adventure around Ireland for the weekend! This was such a great quick and easy fish dish! Amazing for a light dinner!

Preheat the oven to 180C.

Slice the courgette into little half moon shapes. Heat olive oil and minced garlic in a sauce pan on medium heat. Add the courgettes and pan fry until soft - 10minutes or so.

Boil a pot of hot water. Add the beans and boil until cooked through - 7minutes or so.

Mixed together the butter, tbsp of olive oil, and rosemary leaves once removed from the stem. Lay the trout on a baking sheet covered in tinfoil. Brush this mixture over the trout. Put the trout in the oven for 8-12minutes or until slightly opaque and cooked through.

Plate 1 fillet of trout, half the courgettes and half the beans on each plate. Add a piece of fresh-baked multigrain bread if you are feeling a bit more peckish than usual :)
