Ingredients

18 servings
  • 10 cupfat free chicken broth, low sodium
  • 4red potatoes, cut into 1 inch cubes
  • 4 cuponions, quartered
  • 1 cupcarrots, sliced 1 inch think
  • 3 cupcelery, sliced 1 inch thick
  • 2 cupzucchini, sliced 1 inch thick
  • 8 oztomato sauce, canned
  • 2 clovegarlic, minced
  • 1/4 bunchparsley, chopped
  • 1/4 bunchcilantro, chopped
  • 1 dashblack pepper

Steps

  1. 1

    In a large stockpot, combine the chicken broth, potatoes, onions, carrots, and celery.

  2. 2

    Bring to a boil, reduce heat to medium-high, and simmer until the potatoes are tender, about 30 minutes.

  3. 3

    add the zucchini, tomato sauce, garlic, parsley, and cilantro.

  4. 4

    Reduce heat to medium-low and cook for 10 to 15 minutes more, or until the zucchini is just tender.

  5. 5

    Season to taste with black pepper and serve.

  6. 6

    if desired add protein powder just before serving.
