Cooking Instructions

Traditionally, Chap Chae is vegetarian. Adding the beef is optional. If adding, marinate beef in 1 tablespoon soy sauce and 1 teaspoon of sugar, 1/2 teaspoon garlic powder, and a PINCH of baking soda. Mixed very well, marinate at least a hour at room temperature.

Boil noodles for 10 minutes until soft and chewy. Drain. Save water to paraboil spinach. Toss noodles with tablespoon each of Sesame oil and soy sauce, enough to coat. Be careful, noodles are very HOT. Add spinach. Set aside.

Over medium high heat, heat olive oil in a wok and saute onions and garlic with the beef. Add veggies. Then green onions at the end.

Stir fy until beef is cooked and and cartots are softened. Turn off heat, add 2 teaspoons of soy sauce, dash of sesame oil, and black pepper. Mix well.

Combine the stir fry with the noodle and spinach mixture. Toss together well. Add more sugar and soy sauce to taste. Garnish with sesame seeds.

* The noodles will absorb a lot of flavor, because it is made of sweet potato or mung bean starch. Therefore, you will find yourself adding soy sauce a lot. Other veggies can be added such as, red bell peppers or zucchini. These noodles are gluten free.

Always wanted to try this? No idea how? Here is a step by step on how to do this.This is rather time consuming, but oh so worth it. I made this one more veggie heavy, rather than noodle heavy, at least to give the impression it is a tad healthier 😊. I found in restaurants it is mostly noodles, because they are cheaper I suppose.Here is a note about this dish. Required, soy sauce and sesame oil. These two are the major flavor factors.Next is the glass noodles, which offer a slightly chewy texture which is hard to duplicate. But if only rice noodles or regular spaghetti noodles are available, go ahead and use that. The texture will be different, but the flavors should be good still.Sugar and garlic round out the flavors of this dishs basic flavors.Meat is actually optional, tofu can be used also, as well as chicken, pork, etc., Or none at all.The veggies are completely up to you. But the onions are pretty much a staple.The egg is usually for looks, and some only use the yolk for that bright yellow splash of color.This is typically NOT spicy, so it works for a lot of people. I love Korean Chilled Noodles at Korean barbecue restaurants, but I don't like the soup that comes with store-bought Korean chilled noodles. I can't buy only the noodles at my near-by supermarket, and it's too expensive to buy the whole set because I don't use the soup. So when I can't buy only the noodles, I make this Korean-style dish with Chinese noodles or somen noodles.If you don't have the kimchi base, you can substitute with the juice from Chinese cabbage kimchi (2-3 tablespoons). If you have mul kimchi, it will be very delicious if you use the juice from it. Combine the juice with 300 ml water, add vinegar, sugar, beef soup stock granules, and adjust the taste accordingly.
