Wash and chop the vegetables, then place them in a large bowl.

In a jar, combine the juice of 2 lemons with 1 tablespoon sumac and 2 tablespoons olive oil. Add salt to taste, close the jar, and shake well to mix.

Pour the dressing over the chopped vegetables and toss. Serve the Arabic salad with fish, chicken, or beef.
