Aqua faba or bean water is full of starchy protein goodness that keeps it's shape when whipped up - ideal for vegan meringues, mousses and mayonnaise!

Ingredients

15 mins
  1. 60 mlliquid from a can of chickpeas or white beans (1/4 cup)
  2. 1 tspwhite vinegar
  3. 1/2 tspsalt
  4. 1/2 tspsugar
  5. 1 tsplemon juice
  6. 2 tspmustard powder
  7. 180 ml (3/4 cup)vegetable, sunflower or grapeseed oil

Cooking Instructions

  1. 1

    Put the bean liquid (aqua faba), vinegar, salt, sugar, lemon juice and mustard powder together in a glass bowl and mix together with an immersion blender

    Trickle the oil in a very gradual stream, stopping when the mayo thickens and takes on a glossy sheen. It should take around 5 minutes to add the oil in

    Cover and keep in fridge for up to 5 days
