Raw Food Quick Soy Milk Mayonnaise

I learned this soy milk mayonnaise at my cooking class. I altered it to fit my taste. It's so delicious, creamy, and light without any egg yolk!

You can adjust the ingredients if you keep the ratio of soy milk to oil around 1:2.
Use any oil you like. You can substitute vinegar for lemon juice.
You can omit the honey if you'd like your mayo tart.
If you let the mayo rest for a while, the flavors will meld together. Recipe by Ruby fruits

Ingredients

  1. 50 mlSoy milk
  2. 100 mlCanola Oil
  3. 2 tspLemon juice
  4. 1/3 tspSalt
  5. 1 tspMustard
  6. 1 tspHoney
  7. Pepper to your liking

Steps

    Add all the ingredients into a mixing cup in order to use the stick blender.

    Insert the stick blender all the way down to the bottom of the mixing cup.

    It will begin to emulsify as if forming a cloud as soon as you start blending.

    It will turn white and creamy quite quickly. Move the blender up and down to emulsify all the oil on the surface to finish.
