Ingredients

  • 1 cancorn, drained
  • 1 can(16 ounces) green beans, drained
  • 1 bag(16 ounces) frozen peas ( you can also use canned peas, but I don't like them) If you use canned peas, they should be drained.
  • 1 jar(4 ounces) pimiento, chopped and drained
  • 1 cupcelery, finely chopped
  • 1 mediumonion, finely chopped
  • 1 mediumgreen pepper, finely chopped
  • 1 cupsugar
  • 1/2 tsppepper
  • 1 tspsalt
  • 1/2 cupvinegar
  • 1/2 cupvegetable oil

Steps

  1. 1

    Combine all vegetables in a large glass bowl; set aside.

  2. 2

    In a saucepan, combine sugar, vinegar, oil, salt and pepper. Bring to a boil.

  3. 3

    Cool slightly and pour over vegetables.

  4. 4

    Cover and refrigerate overnight.

  5. 5

    If cooking for 2: salad may be stored in a plastic bag or covered container in the refrigerator for up to 1 week.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
