Ingredients

Serves 3-4 servings
  1. About 10 fresh water chestnuts (steamed and ready to use)
  2. 1-2 cupstapioca starch (about 120-240 grams)
  3. 3/4 cupred syrup (about 200 ml)
  4. 4-5 piecesjackfruit
  5. 3/4 cupcoconut milk (about 200 grams)
  6. 2pandan leaves
  7. 1 pinchsalt
  8. 2 tablespoonsgranulated sugar

Steps

    Wash the water chestnuts thoroughly, peel them, and boil for about 5-10 minutes. Remove and let cool.

  2. 2

    Cut the water chestnuts into bite-sized pieces. Soak them in the red syrup until they turn a bright red color.

  3. 3

    Drain the water chestnuts slightly, then coat them evenly with tapioca starch.

  4. 4

    Bring a pot of water to a boil. Add the coated water chestnuts and stir gently. When the coating turns translucent and the pieces float, remove them and place in cold water.

  5. 5

    Heat the coconut milk until just simmering. Add sugar, salt, and pandan leaves. Stir over low heat, then remove from heat and let cool.

  6. 6

    Slice the jackfruit into thin strips for topping.

  7. 7

    Spoon the red rubies into serving bowls, pour coconut milk over them, and top with jackfruit strips. For a refreshing touch, add crushed ice if desired.
