Ingredients

1hr 15 minutes
2 servings
  • 1 glassrice
  • 3ripe tomatoes roughly chopped
  • 1onion
  • 1/2red and yellow capsicum
  • Black pepper
  • Cayenne pepper
  • Olive oil
  • leavesBasil
  • To tastesalt
  • Tomato paste
  • 250 gmarinated chicken
  • Chicken stock

Steps

1hr 15 minutes
  1. 1

    Add your tomatoes and the basil to the blender. Blend till smooth.

  2. 2

    Fry your onion till golden brown. Add your tomato paste and the blended ones. Season with pepper and salt. Add your rice and stir well.

  3. 3

    Add your chicken stock if not enough to cook the rice add a little amount of water. Then simmer on low heat.

  4. 4

    For the chicken marinate it with ginger, garlic and soysauce. let it rest for at list 15 minutes

  5. 5

    Preheat oven at 180 degrees celcius. Smear the chicken with olive oil and bake it for 45 minutes.

  6. 6

    Prepare a salad by steaming capsicums and an apple. Plate and enjoy
