Ingredients

6 servings
  1. 8eggs (beaten)
  2. 2potatoes (boiled and sliced)
  3. 1onion (chopped)

Steps

  1. 1

    The ingredients in brackets can be added to taste.

  2. 2

    Preheat the oven to 180°C

  3. 3

    Fry the onions until properly glazed. You can also fry bacon bits and mushrooms with the onions if you want. Peppers can also be added if wished.

  4. 4

    Layer the boiled and sliced potatoes in an oven dish.

  5. 5

    When the onions (and whatever else you have fried up) are ready, add to the potatoes.

  6. 6

    In a bowl beat the eggs with a little bit of milk our water. Add salt and pepper to taste.

  7. 7

    Pour the beaten eggs over the potatoes and onions.

  8. 8

    Cook in the oven until the eggs have set.

I like simple dishes that are quick and tasty. I also tend to prefer one pot cooking, so there is less to wash!!My mother is Italian, my father is French and I live in South Africa, my meals are never predictable ;-)
