Ingredients

48 servings
  1. 1PASTRY....as follows
  2. 1 3/4 cupall purpose flour
  3. 1/2 cupbutter at room temp
  4. 1/3 cupwhite sugar
  5. 1egg
  6. 1 dashof salt
  7. 1FILLING....as follows
  8. 1 1/2 cupfruit jam of your choice...(our favorite is raspberry or marmalade)
  9. 1 1/2 tspcornstarch
  10. 2 tbsplemon juice

Steps

    Preheat oven 350°F

  2. 2

    TO MAKE PASTRY...

  3. 3

    cream butter, salt and sugar together until fluffy and a pale colour

  4. 4

    whisk egg in a small bowl

  5. 5

    slowly add egg to butter mixture a little at a time, mixing well

  6. 6

    sift flour over butter mixture, mix just until dough forms, don't over mix

  7. 7

    turn out onto lightly floured surface, cover and let pastry rest 20 - 25 min

  8. 8

    roll pastry to 1/4" thickness, cut out circles using a 1 1/4" round cutter

    line mini muffin tin with each circle of pastry

  10. 10

    TO MAKE FILLING...

    in microwave safe bowl, microwave jam 20 - 30 seconds or until softened

  12. 12

    stir in lemon juice and cornstarch

  13. 13

    fill each tart shell with about 2 tsp jam mixture

  14. 14

    bake 12 - 15 minutes or till pastry turns golden brown
