Ingredients

6 servings
  1. 1 lbboneless whole pork loin roast (2 to 3 lbs)
  2. 1 cupvegetable broth
  3. 2 tbspcornstarch
  4. 1/4 cupcold water
  5. 12 oz1 jar (12 ounce) apricot preserves
  6. 1if desired ,you may add a touch of honey

Steps

  1. 1

    place roast in a 3 Quart slow cooker. in a small bowl, combine preserves and broth( and honey if desired) ; pour over roast. cover and cool on low for 6~8 hours or until tender. remove meat to a serving platter: keep warm

  2. 2

    skim fat from cooking juices, transfer juices to a small saucepan. bring liquid to a boil. combine cornstarch and water until smooth. gradually stir into pan, bring to a boil; cook and stir for 2 minutes or until thickened. serve with pork.
