Ingredients

  • 1 1/2 cupAll purpose flour
  • 3/4 cupSugar
  • 1 tspGround cinnamon
  • 1 tspBaking powder
  • 1/2 tspGround nutmeg
  • 1/2 tspBaking soda
  • 1/2 tspSalt
  • 1/4 cupWater
  • 1/2 cupVegetable oil
  • 2 largeEggs
  • 1 1/4 cupShredded carrots
  • 1/2 cupGolden raisins
  • 1/2 cupChopped walnuts
  • 1Cream cheese frosting - optional
  • 3 tbspCrushed pineapple, undrained

Steps

  1. 1

    Line the bottom of a 3 - 4 quart slow cooker with parchment paper. Coat parchment paper and 1/3 the way up of the slow cooker with cooking spray or butter.

    Mixed together the dry ingredients until combined. Whisk together the wet ingredients until blended. Combine wet and dry ingredients and beat until fluffy. Stir in the carrots, pineapple & nuts.

  3. 3

    Spread the batter evenly in the cooker. Cover and cook on high until cake tester inserted into the center comes out clean. About 70 minutes.

  4. 4

    Eat without frosting or you can frost with a cream cheese frosting after removing to plates.

  5. 5

    Serves 4-6.
