Ingredients

  1. 1egg white
  2. 1zest and juice of 1/2 lemon
  3. 1 tbspminced fresh chives
  4. 1 tbspminced fresh thyme
  5. 1salt to taste
  6. 1pepper or white pepper to taste
  7. 1 lbcrabmeat
  8. 1bread crumbs for dusting (I use fresh white bread without the crusts)
  9. 1butter or vegetable oil as needed
  10. 1dill sprigs for garnish if desired
  11. 1/2 cupmayonnaise

Steps

  1. 1

    In a bowl, mix together the mayo, egg white, lemon zest and juice, chives, thyme and salt and pepper.

  2. 2

    Fold in crabmeat.

  3. 3

    Form into patties.

  4. 4

    Dust with bread crumbs.

  5. 5

    Sear cakes in butter or oil until nicely browned on both sides.

  6. 6

    Serve with sauce (previous recipe on my profile called Another Shrimp Sauce) or use another kind of sauce if you wish.

  7. 7

    Garnish with fresh dill if desired.

  8. 8

    *This recipe makes 4 to 6 crab cakes.*

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
