Simple and Easy Chicken Adobo (Adobong Manok)

As a mom of a toddler in his "terrible two" age, cooking is quite a multitasking feat. Its like you wish you could just split into two: one half to watch over your climbing tod and the other half is cooking a decent lunch. Seriously, I find this Filipino dish a time management friendly recipe. I can have it marinated a day before and have it slowly cooked for another day's meal. Slow cooking recipes are my best friends.

Ingredients

1 hour 10 mins
3 servings
  1. 6 piecechicken wings (your choice)
  2. 4 piecegarlic cloves
  3. 1 cupsoy sauce
  4. 1 cupwhite vinegar
  5. 1 tspbrown sugar
  6. 4 smallbay leaf
  7. ground black pepper
  8. 1 cupwarm water
  9. 3 tbspcooking oil

Steps

  1. 1

    In a tupperware container, mix chicken, soy sauce, vinegar, garlic ans sugar. Add ground pepper (optional). Mix well.

    Cover and marinate for at least 1 hour in the refrigator.

  3. 3

    When ready to cook. Put all marinated ingredients (including the sauce) in a pan with cover. Add water and cooking oil.

  4. 4

    Cover pan and put on medium heat. Cook until chicken is tender.

  5. 5

    When sauce is evaporated and only the oil is left, remove the cover and start stiring to give a bit of crispy coat. Keep frying until desired crispyness.

  6. 6

    Serve.

Very easy to make, and very delicious. I made 8 chicken thighs and followed the directions exactly except I added two table spoons of brown sugar instead of one teaspoon I also added ah little chilli powder. My only regret is not reducing the amount of soy sauce it was ah bit too salty , other than that its an excellent dish, this was my first time ever having this and I will definitely make it again.
