  1. 2 canYams, drained
  2. 1 cupWalnut pieces, chopped
  3. 1 cupMini-marshmallows
  4. 2 tbspbutter
  5. Seasonings
  6. 1/4 cuplight brown sugar
  7. 3 tbspOrange Juice
  8. 1/2 tbspvanilla extract
  9. 1/2 tspsalt
  10. 1/4 tspground cardamom
  11. 1/4 tspground coriander
  12. 1/4 tspground ginger
  13. 1 pinchallspice

    Preheat oven to 350

  2. 2

    In a mixing bowl, mix drained yams and butter together with electric mixer on medium, scraping sides regularly, for about three minutes or until creamy/whipped.

    Add seasonings list and mix thoroughly.

  4. 4

    Fold in chopped walnut pieces.

  5. 5

    Spread the mix evenly into a lightly greased 8x8 baking dish.

  6. 6

    Place in the oven and let bake for 20 minutes.

  7. 7

    Pull out casserole and add single layer of mini-marshmallows evenly across the top.

  8. 8

    Return to oven and cook for an additional 10 to 15 minutes, until marshmallow top starts to brown.

  9. 9

    Remove and let sit for 10 minutes to firm up.

    Enjoy!
