Ingredients

  1. 115 gramsdried green lentils
  2. 1 tbspsunflower oil
  3. 1onion, chopped
  4. 2carrots, chopped
  5. 4 clovegarlic, finely chopped
  6. 1red bell pepper, chopped
  7. 1green bell pepper, chopped
  8. 100 gramsmushrooms, chopped
  9. 400 gramscan kidney beans, drained
  10. 400 gramscan of chopped tomatoes
  11. 200 gramscan of sweetcorn, drained
  12. 2 tbsptomato puree/paste
  13. 2 tspchilli powder or to taste
  14. 2 tspground cumin
  15. 1 tspunsweetened cocoa powder
  16. 1 tspsmoked paprika
  17. 1 tsporegano
  18. 1/2 tsponion powder
  19. 1/2 tspground cinnamon
  20. 1/2 tspground allspice
  21. 1/2 tspblack pepper
  22. 1/2 tspsalt or to taste

  1. 1

    Put the lentils in a pan, cover with water and boil for 10 minutes to soften, then drain

    Meanwhile, fry off the onion and carrots in the oil for 3 minutes

    Add the garlic, peppers and mushrooms and fry a further 2 minutes

    Add the softened vegetables into the lentil pan with the cans of beans, tomatoes and sweetcorn

    Add the tomato puree, all the herbs & spices and just enough water to cover all of the ingredients

    Cover and simmer on a low heat for 40 minutes adding extra water if required

  7. 7

    Season to taste, add extra chilli powder etc to suit your palate and serve hot with some crusty garlic bread
