Prepare hollandaise sauce as directed.

Cook bacon and drain on paper towels.

Toast bread and butter.

Melt butter in pan. Add eggs. Cook on low until bottoms of eggs are cooked. Add water. Cover and cook until tops are cooked. Turn heat off. Flip eggs and cook until yolks are cooked.

Assemble. Bread, bacon, egg, hollandaise . Sprinkle with pepper and chives.
