Slowly drizzle the oil in a thin stream while blending with the garlic until all the oil is incorporated.

Add the lemon juice and blend gradually. Mix in the labneh or mayonnaise.

The more oil you add, the milder the garlic flavor becomes. Labneh or mayonnaise also helps mellow the garlic, but you can leave them out and just use oil and lemon if you prefer.
