Ingredients

  1. 1 cupcooked black beans
  2. 1/2 cuporange juice
  3. 1bell pepper; half julienne
  4. 1lime
  5. 1/2 tsplemon peel seasoning
  6. 1/2 tspground coriander seed
  7. 1 pinchsalt and peppercorn melange
  8. 1vegetable oil; as needed

Cooking Instructions

    Marinate beans in orange juice for a couple hours. Drain.

    Heat oil in a large saute pan. Add bell pepper. Sweat until tender. Add beans. Toss. Add dried spices and a squeeze of lime. Toss. Sweat until beans are heated through. Serve with a lime wedge.

    Variations; Mojo, tequila, jalapenos, habanero, roasted bell peppers, tomatoes, corn, grapefruit, garlic, red onion, shallots, caramelized onions, sugar, vinegar, horseradish, honey, rum, vodka, gin, bacon, cilantro, chives, scallions, goat cheese, sweet potatoes, beer, pearl onions
