Ingredients

  • 1 tablespoonolive oil
  • 1/2onion diced
  • 1/2red pepper diced
  • 2 clovesgarlic, minced
  • 1/2easpoon cumin
  • 1/2jalapeño, diced
  • 1/4 teaspooncoriander
  • 1/4 teaspoonoregano
  • 1/4 teaspoonsalt
  • 1/teaspoon smoked paprika
  • 1/8 teaspoonpepper
  • 1/8-1/4 cupwater
  • 1 canblack beans, undrained
  • 1 TBSPsalsa lizano
  • 1/8 cupfresh cilantro, chopped
  • juice of 1/2 lime
  • Garnidh with chopped scallions

Steps

  1. 1

    Saute peppers, onion and garlic for 5 min.

  2. 2

    Stir in all seasonings, saute 1 min

  3. 3

    Add beans, lizano and water. Bring to boil, reduce to simmer for 10 min

  4. 4

    Stir in cilantro and lime juice

  5. 5

    Serve, top with scallions
