A cute, retro even way of serving a 'stuffed' potato, mashed and baked!
Cooking Instructions
- 1
Peel and quarter the potatoes and bring them to boil in a large pan of water
- 2
Cook for 20 minutes or until tender, then drain and cool slightly
- 3
Mash in the sunflower spread, salt & pepper and enough hot milk to make a firm but pipeable mixture
- 4
Preheat the oven to gas 6 / 200C / 400°F and grease or line a baking tray with parchment paper
- 5
Spoon the potato mixture into a piping bag with a wide nozzle attached
- 6
Start piping the potato onto the baking tray in a swirl pattern, starting from the inside working outwards
- 7
When you've done the base continue piping around the outside line to build up the sides a little to make a nest shape
- 8
Brush the nests with a little more milk and bake for 20 minutes or until they begin to turn golden
- 9
These are perfect for filling with anything savoury. Baked beans and chopped sausage, peas and rolled bacon, sweetcorn and chopped peppers, diced carrots & gravy, broccoli & cheesy sauce......

I love a bowl of vichyssoise on a hot summer evening. Cool, creamy, smooth and delicious. This is intended to be eaten chilled but if that thought throws you, you can eat it warmed with a nice foccacia or garlic bread. Usually it calls for the white part of the leeks only but I use the whole leek, I love the shade of green it gives Vicky@Jacks Free-From Cookbook -

The kids asked for sweet potato pie but I didn't have enough ingredients to make the pastry for it. I do have a crustless version but instead I decided to use up the flour that I did have on hand and make a sweet potato crumble with it. Instead of the crumble topping you could use crushed up cornflakes for a lovely crunchy topping Vicky@Jacks Free-From Cookbook -

This is one of my favourite recipes because you can change it up every time you make it. I made chicken soup earlier and chopped up some of the boiled chicken and put it in here with some green beans, peas, carrots & sweetcorn. Last time I made it with cocktail sausages, I've put in bacon, fish, made the sauce cheesy, any leftovers you have can be stuck in and it'll taste great! Vicky@Jacks Free-From Cookbook -
