Preheat oven to 400° F.

In a small saucepan, combine the butter, salt, olive oil, water, and cayenne pepper.

Bring to a boil.

Add the flour all at once.

Stir until the mixture forms a smooth ball.

Cook over low heat until the mixture is drier but still smooth.

Put the mixture into a mixing bowl and beat in the eggs one at a time.

Stir in the cheeses.

Drop spoonfuls of batter onto a greased cookie sheet.

Bake for 20 minutes or until the puffs are slightly browned and firm.
