Clean beans by washing and snapping off stem ends.

Blanche the beans: bring a pot of water to a boil. When boiling, add beans. Cook 1 minute. Don't cook any longer... they won't be crunchy anymore.

Immediately drain beans and plunge into an ice bath (a bowl of ice water) for 5 minutes.

When cooled, place the beans in the jar with the left over pickle juice. Chill in fridge for 3 days.
