Ingredients

30 mins
4 servings
  • 1/2 lbHot Italian Sausage (bulk or sqeeze from casings)
  • 1 canDiced Tomato, undrained (15 oz can)
  • 2/3 cupDiced Onion
  • 1/2 tspItalian Seasoning
  • 1/2 cupHeavy Cream
  • 1 canBlack Olives (2 1/4 oz). I did not use that, don't like olives.
  • 8 ozSpinach
  • 12 ozRigatoni Pasta, Cooked according to directions and drained
  • 1Salt
  • 1Parmesan or other Italian Cheese Mix

    Cook Pasta according to directions

  2. 2

    While Pasta is cooking, place Sausage and Onion in a large Skillet and cook over medium-high heat until Sausage is no longer pink.

    Drain Grease and wipe Pan with a Paper Towel. Return Mixture to Pan.

  4. 4

    Add Tomatoes and Italian Seasoning.

  5. 5

    Bring to a boil, then reduce heat, cover and let simmer for 10 to 15 Minutes.

  6. 6

    Add Cream and Olives (if using) and heat thoroughly but not boiling.

  7. 7

    Add Spinach and stir until wilted.

  8. 8

    Stir in cooked Pasta.

  9. 9

    Add Salt to taste.

  10. 10

    Top with Cheese and serve.
