I have made this recipe over and over until I think I finally made the best whoopie pies! Chocolate cake round and cream have just turned out so delicious! I truly hope you try these and enjoy!

I have made this recipe over and over until I think I finally made the best whoopie pies! Chocolate cake round and cream have just turned out so delicious! I truly hope you try these and enjoy!
Cooking Instructions

In a sauce pot, whisk milk and flour over medium heat until thickens. About 5-7 minutes, set aside to cool.

In a large mixing bowl, beat sugar, butter and shortening several minutes until it becomes fluffy. Scrape bottom of bowl and sides,add vanilla and mix through.

Beat in thickened milk mixture and beat several minutes again, you want to get volume.

Chill for 2 hours before assembling whoopie pies.

Now for the batter.

Preheat oven to 375degrees f.

In a large mixing bowl beat sugar with shortening. Add eggs and beat until mixture is very creamy about 3 minutes. Add vanilla.

Add dry ingredients and milk. This batter is thick.

On parchment paper lined baking pan draw circles with a pencil and cup. Turn parchment over, drop a large tablespoon of batter and spread within 1/4 " of outer circle. This allows for spreading during baking.

Smooth out just alittle with back of spoon so batter won't be too high. Keep each about 2" apart and as even in diameter as possible.

Bake 17 minutes. Do not over bake. Tooth pick inserted in center of cakes should be come out JUST a touch moist.

Cool cakes completely on a rack. Now start filling.

Pick two cake rounds that are close in shape. Place filling on flat side of cake and top with another cake. Assemble all your pies. Chill 1- 2 hours before serving and store in refrigerator.

You will most likely have leftover cream filling. You could make these double stuff whoopie pies or just freeze any unused portion. One pie is equal to two portions.

Ah, Whoppie Pies. The cookies are more like little devil's food cakes. The filling is just fluffy, sweet and delicious. These are little heavenly bundles of childhood memories made from a family recipe passed down to me from my dear Nana. My personal opinion is that in order to know the true Whoopie Pie taste you need to make them from scratch, from a traditional recipe which calls for shortening. Those box mix recipes just don't cut it and once you've tried one from scratch you'll know why. If you're worried about the use of shortening you can substitute butter or margarine if you wish (although I detest margarine). I generally don't use shortening, but this is the one recipe I will use it in because I prefer the results. StephieCanCook -
