I made these for a cookout at my Son's last weekend for a early 4th of July celebration. Whoppie pies are a family favorite and I am always trying new variations. These looked so festive but more important were a delicious new flavor combination!

  1. for vanilla whoppie cakes
  2. 2/3 cupbuttermilk
  3. 1 cupgranulated sugar
  4. 4large egg yolks
  5. 1 1/2 tspvanilla extract
  6. 2 tspbaking powder
  7. 2 cupall-purpose flour
  8. 1/4 tspsalt
  9. 4 ozunsalted butter, at room temperature
  10. red food color, gel or liquid
  11. blue food color, gel or liquid
  12. 6 tbspunsalted butter, at room temperature
  13. STRAWBERRy CREAM FILLING
  14. 7 ozjar of marshmallow fluff
  15. 1 1/2 cupconfectioner's sugar
  16. 1/8 teaspoonsalt
  17. 1/3 cupgood quality strawberry jam
  18. garnish
  19. 1/2 cupred, white and blue sprinkles

    Preheat oven to 350. Line 2 baking sheets with parchment paper

    Whisk flour, baking powder and salt in a bowl, set aside

    Beat butter, , sugar and egg yolks togetherl until creamy, add vanilla and buttermilk. Add the flour mixture and blend well

    Remove half of dough to another bowl

    Color one bowl of batter blue with the blue food color. Color the other red with the red food volor

    Drop by 2 tablespoon fulls 2 inches apart on prepares pans. Smooth tops a bit

    Bake until they spring back when touched 10 to 12 minutes. Cool on rack in pan 5 minutes then transfer to racks to cool completely

    MAKE STRAWBERRY CREAM FILLING

    Beat butter until smooth, add remaining ingredients and beat until creamy

    Sandwich strawberry cream between one blue and one red cake

    To finish whoppie pies, Spread sprinkles on a plate

    Roll edges of filled whoppie pies in sprinkles to coat egdes

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
