I wanted both chicken pot pie and chicken and dumplings and was too lazy to do it up right, so here's what I came up with.

I wanted to use my leftover Soup.So I thickened it with a lil corn starch. Pre bake a phillsburry pie crust added the mixture of Chicken Soup .Then put dollopes of biquick on top...Turned out great .You can freeze these in smallet cups.Add the biquick before you bake them.

One year I thought I'd try something different with the leftover Thanksgiving turkey. So after reading various pot pie recipes and consulting with my grandmother, I took all the ingredients I liked, added some of my own touches and created this recipe over 10 years ago. I make this the Sunday after every Thanksgiving and its in high demand. I also save some of the leftover turkey to make turkey street tacos too. That's on Tuesdays :)

I needed something quick and easy and I wanted to use the leftover roasted chicken I had. I usually make my own pie crust. But sometimes I'm in a rush and don't have the time to make a crust so a premade crust is suffice. I make my own gravy because I don't like using cream of chicken soup or cream of mushroom soup like a lot of recipes call for.

I love pot pie and my boyfriend loved this dish. so it is worth making for sure. :chef
