My husband loves to go flounder gigging. He's been doing really well lately, so that means lots of fresh fish and new recipes! I make tacos quite often. The beauty about tacos is their versatility. You can make them out of anything... well almost 😉.This recipe comes with a side of spiced up black beans too! Cooking with Kimberly Wood -

In the picture I also made a mango salsa. 1-mango, half a red onion, cilantro, and squeezed 2-limes. Diced it up and mixed it all together. Great on the tacos or with chips! RONDEEZEE -

Healthy low fat baked fish tacos with “grilled” corn Healthy low fat baked fish tacos with “grilled” corn
I was craving a fish taco so I made this low fat version. It would be better with corn tortillas but I only had whole wheat flour tortillas. It uses frozen corn that you broil in the oven to mimic grilled corn. And healthy sautéed veggies in water. No oil is used except to grease the baking dish.I also used dried Sumac instead of lemon juice. Sumac has a sour taste and I don’t tolerate citrus well. Turned out really good. The fish was flavorful and not dry. wgreen39 -

Salmon tacos Salmon tacos
There's a million ways to make fish tacos, and this is my version. Because I'm a proud West Coast Canadian, I used salmon instead of the usual whitefish, and put a hint of maple syrup in the sauce. The best thing about this recipe is that everything can be made ahead of time, and assembled at the table. Robert Gonzal -
Vegetarian Chicken Tacos Vegetarian Chicken Tacos
When I was a kid, my stepmom used to make these tasty chicken tacos that my family was completely obsessed with, couldn't get enough of, can't eat just one kind of taco. Now, several years later and that stepmom long gone, I decided to try and make a version of those same old tacos that my vegetarian/pescatarian husband could try. I'm happy to say he loves them! candace.norred
