I love soup on a cold day, and I wanted to make something hearty and quick. My toddlers even love this soup. It's fragrant, beefy, and versatile. Enjoy!

Ingredients

30 mins
  1. 2 lbhamburger
  2. 2 tbspolive oil, extra virgin
  3. 1 smallonion
  4. 3 clovegarlic
  5. 1 packagessliced mini portabellas
  6. 1potato (diced small)
  7. 4 stickcelery (sliced thin)
  8. 6 cupbeef broth
  9. 1 packagesfrozen mixed vegetables
  10. 1Italian seasoning
  11. 1sea salt
  12. 1cracked black pepper
  13. 1sage
  14. 1Cajun seasoning
  15. 1garlic powder
  16. 1grated Parmesan (for garnish)

Cooking Instructions

    Heat olive oil in a soup pot, then sautee garlic, onions, mushrooms, potatoes and celery until onion is translucent and mixture is fragrant.

    Add hamburger and cook through until brown.

  3. 3

    Add some garlic powder, Italian seasoning, sage, Cajun seasoning, salt, and pepper to meat to help infuse flavors while hamburger browns.

    When meat is browned drain as much grease as possible.

    Add beef broth (add more or less, depending on thickness of soup preference).

  6. 6

    Once soup gets hot add frozen vegetables and more of each spice until you reach preferred flavor.

    Cook until vegetables reach preferred consistency.

  8. 8

    Serve hot with grated Parmesan on top for garnish.

How much of the seasonings? You say 1...is that tsp, tbsp, dash or what?
