Ingredients

20 minutes
4-6 people
  1. 1 lbground beef
  2. 1 bagshredded carrots
  3. 1large onion chopped
  4. 1 pintsliced portobello mushrooms
  5. 1 tspOnion Powder
  6. 1 tspGarlic Powder
  7. 1 tspBasil
  8. 1/2Salt
  9. 2 cupsOrganic Chicken or Beef Stock
  10. 3/4 cupcashews

Cooking Instructions

20 minutes
  1. 1

    In a large sauce pot, brown ground beef.

  2. 2

    Add carrots, onion, mushrooms, onion powder, garlic powder, basil and salt

  3. 3

    Cook on medium heat stirring occasionally until vegetables are tender

  4. 4

    In a high powered blender (I use a Vitamix) add chicken or beef stock and cashews. Blend on high for 5 minutes or on the hot soup setting.

  5. 5

    Pour the cashew cream sauce into the pot with the ground beef and vegetables. Stir, serve and enjoy!!
