Ingredients

  1. 2 largePotatoes boiled and mashed
  2. 1 cupBoil Noodles
  3. 4Frankie Rotis
  4. 1/4 cupGreen peas parboiled and crushed
  5. 1 tablespoonOil
  6. 1/2 teaspoonCumin seeds
  7. 1/2 tspGinger finely chopped
  8. 1Green chilli finely chopped
  9. 1/4 teaspoonRed chilli powder
  10. 1 pinchTurmeric powder
  11. to tasteSalt
  12. 1/4 teaspoonGaram masala powder
  13. 1 tablespoonFresh coriander leaves chopped
  14. 1/2 teaspoonDry mango powder
  15. 4 teaspoonsGreen chutney
  16. 1Onion sliced medium
  17. to tasteChaat masala

Steps

    Heat oil in a non-stick pan. Add cumin seeds and sauté lightly. Add carrot, crushed green peas, ginger, green chillies, red chilli powder, turmeric powder, garam masala powder, salt and sauté on medium heat for two minutes. Transfer onto a plate and cool. Add boild noodles, mashed potatoes, coriander leaves and amchur powder and mix well. Adjust seasoning.

    Divide this mixture into eight portions and and shape into four-inch long cylinders and shallow fry in sufficient hot oil till light golden. Drain on absorbent paper and set aside. To prepare the frankie, place a roti on a flat working surface, spread a teaspoon of green chutney all over the roti.

    Place a potato roll on one side. Sprinkle some sliced onions, sprinkle chaat masala over it and roll the roti. Similarly prepare the rest of the frankies, wrap in aluminum foil and serve immediately.
