One night when i was going to make dinner my husband said he was tired of plain old pork chops. I hadnt been to the store yet so i raided the cabinets and fridge and came up with this! Its a favorite in our house and my parents house now.

Ingredients

  1. 1 packagespork chops
  2. 1 cangreen enchilada sauce
  3. 1 cupchunky salsa
  4. 1onion, sliced
  5. 1green bell pepper, sliced
  6. 1 packagesmushrooms, sliced
  7. 2 tbspbutter
  8. 1 tbspgarlic
  9. 1 cupcheese
  10. 1cilantro

Cooking Instructions

    Slice onion, bell pepper, and mushrooms in slivers and saute in butter with garlic. Set aside.

    In medium bowl mix enchilada sauce and salsa

  3. 3

    Line pork chops in greased baking dish and pour enchilada sauce mix over the top.

  4. 4

    Bake at 350 for 25 minutes. Pull out and top with sauted vegies and cheese. Bake for an additional 15-20 minutes. Top with cilantro

I would sear them then sauté the veggies. I feel the pork chop wouldn’t have a rubbery texture
