Ingredients

1 serving

1tortilla/fajita wrap
2eggs
1/2 tbspThai red curry paste
1/2 tspsoy sauce
1/2 tspfish sauce
1 tsplime juice
optional extras
1/4red chili, chopped and de-seeded
1a few sprigs of coriander, chopped

Mix all your ingredients except the wrap thoroughly.

Cook your scrambled eggs in your preferred method - I love mine in a medium heat in a frying pan for approximately 4 minutes, stirring regularly.

Serve in your wrap (or however you wish!) and enjoy! Simples!
