Steps

Grill eggplant until the skin is burned black. Peel the burned skin. Use a fork to smash the eggplant on a plate. Set aside.

Heat pan on medium fire and pour canola oil. Fry crushed garlic and ground meat, season with salt and ground black pepper. Pour onions and tomatoes. Simmer for a few minutes and set aside.

Season beaten eggs with salt and whisk. Put smashed eggplant in an oval bowl and pour beaten eggs, fried ground meat with onions and tomato.

Using the same pan, reheat on medium fire and add a little canola oil. Pour the eggplant mix.

Season with thyme and flip when the bottom is cooked.Serve with your favorite condiments and drinks
