Roasted Pimento Potatoes

Ingredients

4 servings
  1. 5 mediumpotatoes, peeled and cut into wedges
  2. salt
  3. cracked black pepper
  4. 100 mldry white wine
  5. 2 tbspfresh lemon juice
  6. 1 tspheaped pimetao
  7. olive oil, extra virgin
  8. 3garlic cloves, finely chopped
  9. chili powder or flakes, (optional)

    In a small bowl, mix well the wine, chili, pimento, garlic cloves, lemon juice, salt and black pepper.

    In a large bowl place your potatoes and mix with the marinade. Mix well.

    Transfer to a baking tray big enough so the potatoes don't overlap

    Leave your potatoes overnight in the fridge or for 3-5 hours to marinade.

    Preheat your oven to 190c.

    Drizzle some olive oil on the potatoes.

    Transfer the tray to the oven. Bake for 30-60 minutes. Depending on your oven and how thick the potatoes are it may only take 30 minutes to bake. After the 30 minutes mark check every 10 minutes until they are done. Keep checking the potatoes are not sticking and stir them every so often.
