Ingredients

  • 4 oz(about 2 cups) spinach
  • 1/2 cupfresh cilantro, chopped
  • 3 cupwater
  • 3/4 cupvegetable oil (I use canola)
  • 2 1/2 cuplong grain white rice
  • 1 tspsalt (you can also use sea salt)
  • 3/4 cupcorn kernels
  • 1garlic clove (or 1/4 teaspoon minced garlic)
  • 1 cupthinly cut spinach
  • 1hot chili pepper, fresh with the stem removed

    In a blender, combine the 2 cups spinach, cilantro, garlic and chili pepper.

  2. 2

    Blend until smooth.

  3. 3

    Set aside.

  4. 4

    In a medium sized skillet over medium heat, heat the oil.

  5. 5

    Add the rice and cook, stirring constantly, until lightly golden, about 5 minutes.

  6. 6

    Add the vegetable mix, water, salt and corn and bring to a boil.

  7. 7

    Cook for 5 minutes.

  8. 8

    Lower the heat and simmer, covered, until the liquid is absorbed, about 15 minutes.

  9. 9

    Add the 1 cup cut up spinach before serving.

Some of my favorite things are family, friends, my pets, cooking, baking, football (Badger & Packer), Brewer baseball, college basketball, car racing, thrift stores, volunteering, and rummage sales. I have a 9 year old rescue dog, and 7 birds ( 6 are rescue) and they range in age from 1 year to over 19 years old. I volunteer for a dog rescue and a shelter, as well as other festivals and organizations.
